Openings: 8 positions Location: Nairobi – Central kitchen & outlets Overview: Our client is looking for eight Commis Chefs to support hot and cold sections—prepping, cooking, and plating to spec while keeping hygiene tight and waste low in a high-throughput kitchen. Key Responsibilities: - Prep mise-en-place (cuts, marinades, stocks) to daily par. - Cook/plate to recipe and pass standards; communicate clearly on the pass. - Clean as you go; follow section cleaning schedules and HACCP logs. - Rotate stock FIFO; label/date correctly; record temps. - Assist receiving and storage; handle delivery checks. - Support banquets and off-site events when rostered. - Report equipment faults; follow safety procedures. Education & Experience: - Certificate/Diploma in Culinary Arts (Utalii or equivalent). - 0–2 years of kitchen experience; attachments count. Skills & Tools: - Tools: knives, commercial ovens/grills/fryers, thermometers, recipe cards. - Skills: knife skills, seasoning, speed/stamina, teamwork. KPIs: - Ticket times, spec adherence, wastage %, station hygiene score. Work Conditions: - Hot kitchen; long standing; shifts. Compensation (Kenya) KES 25,000–40,000/month.
